Grandma Z’s Swedish Cream Wafers

Hold on to your pants- these may be THE best Christmas cookie you have EVER tasted!!!  I’m not lying, so freak’n good!!!

Growing up my grandma Z would mail a large tin of Christmas cookies to us every single year.  This was one of my favorite parts of Christmas….we all waited for these cookies in eager anticipation.  The tin was always full of about 5 or 6 different types of cookies, but these were always my absolute favorite!  I might start to drool just thinking about them.   They were usually gone after the first day the tin arrived.  

After a while my grandma decided she couldn’t make the cookies anymore.  I was scared I would never taste this deliciousness again!!  Thankfully, she shared all her amazing recipes with us so we could start a new tradition making them for our friends and family.

For a long time I swore I was never going to share this recipe, but then I realized that was silly and that you should ALWAYS share good things!

A delicious tiny Christmas cookie

Ingredients
  • Swedish Cream Wafers
  • 1 cup butter
  • ⅓ cup thick cream
  • 2 cups flour
  • ½ teaspoon salt
  • Filling:
  • ¼ cup soft butter
  • ¾ cup powdered sugar
  • 1 egg yoke (optional- makes the frosting creamier, but is not a must)
  • 1 teaspoon vanilla
  • food coloring
Instructions
  1. Mix together well: butter, thick cream, flour, and salt.
  2. Chill dough in the refrigerator.
  3. Roll dough ½ inch thick.
  4. Cut with a small cookie cutters.
  5. Coat in sugar.
  6. Put on a cookie sheet and prick with a fork 3-4 times
  7. Bake at 375 deg. for 7-9mins
  8. Cool, then put together with filling
  9. For filling mix: butter, powdered sugar, egg yoke, vanilla, and food coloring
